Dave's Mashed Potatoes
3 Large or 4 Medium RED potatoes, Preferably grown in North Dakota
Peel and Cut potatoes in 1 inch cubes Place in pan with water and salt and bring to boil
Reduce heat to medium and cook for 20-25 minutes until tender. Drain potatoes and return to pan.
Sprinkle potatoes with garlic powder.
Add
1/2 cup light sour cream
1/2 cup 1 % milk
1/4 cup butter or buttermilk-based margarine (ie Move Over Butter)
1 Tbsp Parsley flakes.
Mash potatoes, leaving a few lumps in them and mixing the ingredients well. These are
delicious! Enjoy!!!!
Recipe for Another Day:
Take a few left-over meat balls and crumble them in a low oiled ceramic casserole or individual
dish suitable for baking (see meat ball recipe). To some of the left over mashed potatoes
add 1/4 cup of shredded cheddar cheese. Mix throroughly. Cover the meat mixure in the casserole with at least
1/2 inch of the mashed potato-cheese mix Top with paprika. Bake for 40 minutes at 325 degrees,
until top of potatoes are nicely browned. Serve immediately.
