Broiled Lime-Parsley Salmon Filets

1 lb. salmon filets
lime juice
dried parsley leaves
olive oil

Place salmon filets in a small dish and pour lime juice over. Marinate 2-3 hours in the fridge, turning occasionally. Remove from pan and cover both sides in a little olive oil and salt and pepper to taste. Lay on broiler tray. Drizzle a couple tbsp. of honey over the top of each filet and spread over filets evenly with a butter knife. Sprinkle dried parsley leaves over the top of the honey.

I prefer a low temperature broil, with the oven setting at 450 degrees. At this temperature the filets will take 15 minutes or so to cook. Watch carefully as cooking time will vary depending on your oven and the thickness of the filets.

These filets are delicious with the winter squash casserole.
